PHIRNI

PHIRNI is a classic swwet dish which is must have in north india... It is made up of ground rice... the basic difference between kheer and phirni is that kheer is made up of whole basmati rice while phirni is made up of ground rice.... both have very different texture... here the recipe is brought to you with a twist that is here phirni is given slight taste of custurd...

lets take a look at the recipe;

INGRIDIENT:

Rice-4 tablespoon milk-600ml

sugar- as per taste

custard powder- 1 1/2 tspn

green cardamom powder- 1 tspn

almonds and walnuts for

METHOD:

1.soak the 4tblspn rice in water for overnight. or 3-4 hrs.

2. drain the water from rice.

3. pour the rice in mixer grinder jar n add cold milk just for making a fine paste.

4. make a fine rice paste with not much thick consistency.

5. boil the milk in a pan.

6. when boiling starts add the rice mixture paste.

7. continuously stir the milk to avoid lumps on low flame.

8. stir it till the milk starts thickening.

9. in a bowl mix custard powder n cold milk n make a solution .

10. pour the custard solution into the phirni mixture.

11. stir it well.

12. add sugar and dissolve the sugar.

13. when the phirni consistency thickens add the cardamom powder into it. mix well and switch off the flame.

14. pour the phirni into a dish and refrigerate it for setting.

15. add chopped almonds and walnuts for decoration.

16. serve the phirni chilled....

suggestions-

1. we can add sugar at the time of boiling the milk also.

2. saffron and rose water can may be added as per traditional taste.
